Ingredients

Amount 2lb Loaf Ingredient Amount 2.5lb Loaf
1⅓ cup Sourdough Starter 1½ cup
7oz  (¾ cup +2TBSP) Filtered Water ¾ cup, 1 TBSP (13 TBSP)
2 tsp Salt 2½ tsp
2 cups Bread Flour 2¼ cups, 2 TBSP
1 cups Wheat Flour 1 cups

NOTE: Flour, Water, and Starter amounts are approximate and may need to be adjusted based on preference and desired loaf consistency.

Directions

  1. Verify that the paddle is installed in the breadmaker loaf pan.
  2. Set the breadmaker to make a 2 Pound or 2.5 Pound Loaf.  Modify the Rise cycle(s) to be as long as possible.  I use a Breville Breadmaker on the “Basic” setting, light crust, and modify all three rises to be 1 hour 40 minutes each.  The entire mixing/rising/baking process takes 6 hours in my machine.  With sourdough longer rises are always better.
  3. Add the Ingredients to the breadmaker loaf pan in the order listed above starting with the sourdough starter.
  4. Install the breadmaker loaf pan into the breadmaker and start the cycle.  I have found that this loaf works just fine on a delayed start so that I can put it in the breadmaker before bed and have it be ready by a certain time the next morning.

Yield: One 2-pound loaf or a very tall 2.5-pound loaf.
