Ingredients
1¼ Cup Grape Nut cereal
3 Tbsp. butter
3 Tbsp. honey
1 Cup milk
1 large egg
¾ Cup whole wheat flour (or use white flour instead)
¾ Cup unbleached white flour
½ Cup Sugar
1 ⅓ tsp. baking powder
¼ tsp. salt
Dash of cinnamon

Directions
1. Saute the Grape Nuts in the butter over medium heat, stirring frequently. After about five minutes, remove from heat and add the honey and mix well.

2. Beat together the milk and egg until uniform. Add the Grape Nuts.

3. Sift together the dry ingredients. Make a well in their center and add the wet and stir briefly. Fill your greased muffin cups 2/3 full and bake 17-23 minutes at 400 degrees. Yields about 1 dozen 2 inch muffins.
