Ingredients
1½ cups rolled oats
¼ cup whole wheat flour
⅔ cup raisins
½ teaspoon salt
½ cup orange juice (or sweet lemon juice)
1½ cups raw apples, shredded
NOTE: Substitute whole wheat flour for oat flour for a Gluten Free option.
Directions
– Preheat oven to 375°F
– Combine all ingredients in a bowl. Using a wooden spoon may be tough. I recommend just using your hands.
– Press the mixture into an 8×8 pan
– Bake 25-30 minutes until lightly browned on top
– Immediately, cut edges loose. Then work your spatula underneath all sides to free the bars from the pan.
– Cut the bars while they are still warm
Yield 6 bars

Sweet Lemon Juice
2 Tbsp lemon juice
2 Tbsp sugar
½ cup water
Yield a little more than ½ cup Sweet Lemon Juice
